This is an easy meal to prepare and very quick if you have all the ingredients on hand.
- 2 Tbsp olive oil
- 4 chicken breasts, diced
- 1 packet Taco seasoning
- 2 cups cooked navy or other white bean (optional)
- 1 cup water
- shredded cheese
- tomatoes, diced
- sour cream
- taco sauce
Heat oil, brown chicken, add beans if using and season with taco seasoning. Add a cup of water and let simmer.
Take a tortilla, place chicken and layer cheese, lettuce, tomatoes, sour cream and taco sauce and voila. Your meal is ready to enjoy!
Tip: To have more for your buck add the navy beans or other white beans to the chicken and watch your meal feed more people or last longer.
