WPS food-Salad – Eat from the earth

Salads are like the easiest thing to put together. I love a salad that pops with different colors and try to get the green, orange, red, yellow, purple vegetables and fruits incorporated. Try make a bowl every day as part of a heart healthy diet. No cholestorol, no sugar, no bad fats.  You don’t have to make the same salad everyday. Just follow this recipe for the basics and then  build on it. Add whatever you fancy. I like to change up the grapes in this recipe for raisins, cranberries, apples, or cherries. Sometimes, I add walnuts or pecans or sunflower seeds. Sometimes I add cucumber instead of pepper. It really is a versatile recipe.

This is one of my to go to salads.


1 heart Romaine lettuce, chopped

2 cups Spinach, chopped

3 Carrots grated

1 Tomatoe, diced

1 sweet pepper- orange, red or yellow, diced

1 cup grapes, sliced

Juice of 1/2 fresh lemon

Home made salad dressing


  1. Start with a  base, mix of lettuce, spinach and carrots.
  2. Next add diced tomatoes, diced pepper, sliced grapes and a dash of lemon.
  3. Drizzle a little of home made dressing of olive oil, apple cider vinegar, salt, pepper, garlic and onion powder, shaken not stirred.
  4. Serve into a bowl and enjoy!
