I love to make a big bowl of this coleslaw because it is so versatile, it’s goes well with most  dishes and best of all it’s made with two ingredients that you can find just about anywhere. Fresh cabbage and fresh carrots!  Add a little bit of freshly made dressing and you have yourself a delicious homemade coleslaw.  Let me show you how to make it.

This is one of my favourites. It’s close to having a homemade hot pocket. You can make it ahead of time for busy days or for your lunch the next day and, best of all it’s quick and easy. All you have to do is cook the beef into an omelette adding two or three types of herbs, create a wrap then toast in a skillet and voila! Here is the recipe.

We are sooooo excited to be among the top 18 winners on the CreateTV cooking challenge that just ended. When we submitted our food video- Njahi Turkey Stew with Pilau Rice it was with the idea of creating a new recipe to showcase a very unique bean; The Njahi bean.

Njahi is a special black bean beloved by all Kenyans and cooked in kitchens all over the country. I imagined that the beans would go well with the ground turkey, seasoned with a blend of spices and simmered in homemade turkey broth. I had experimented with coconut milk and wanted to add it to make the stew creamier and even more flavourful. So that was it. It was time for Njahi beans to shine. The challenge was on.
